More than 100 sandwiches bear this ‘Signature’

A brother and sister have partnered up to offer a variety of quality, hot sandwiches — kicked up a notch — to the Farragut area.

Robert “Jeffrey” Gipson and Pamela Asher opened Jeffrey’s Signature Sandwiches at 10710 Kingston Pike, Suite B, Dec. 1, 2017. It is located in the shopping center behind Sonic alongside Canton Hollow Road.

“We have a variety of over 100 sandwiches,” Gipson said.

The restaurant’s four-page menu gives customers a sneak-peak of its many offerings such as applewood-smoked bacon, gourmet cheeses, fresh-roasted turkey, prime round ground beef, grilled chicken “Cordon Blu,” Philly cheesesteaks, specialty burgers, Reubens, Cubans and subs, among only a few of the selections. Customers also can build their own sandwiches with their choice of breads, meats, cheeses, vegetables and condiments.

Jeffrey’s also offers salads, specialty fries and homemade chili. Along with dine-in, the restaurant has carry-out, delivery and catering services.

What sets the restaurant apart is the variety and quality that combines fast food and dine-in “so you can come in and have great food very quickly … and it’s hot sandwiches, specialty breads and meats,” Asher said. “Many of the meats are not deli meats,” she added.

Gipson roasts the turkey and beef in-house himself. All the ingredients are fresh and sandwiches are made when they are ordered, he said.

“We don’t have many shortcuts,” Gipson said. “There’re not many places like that anymore. [Others] don’t go to the trouble of roasting [the meats] themselves.

“The hamburger is not a frozen product,” he said. “It’s a blend of different parts of the beef we have a butcher prepare for us.”

The chicken salad is made from scratch from a recipe created years ago, and the desserts also are made from scratch.

“Many of our sauces, gravies and chili are made in-house,” Asher said. “They don’t come in frozen, packaged.”

“It gives us the best opportunity to be as good as we can,” Gipson said. “There are very few restaurants that offer the quality and quantity we do.”

Gipson, 61, has been a restaurateur for all of his adult life.

“He started (in the business) when he was 14,” Asher said.

Gipson, who opened his first sandwich shop in 1986, previously owned restaurants out of state — his first being in Pendleton, South Carolina — and when he moved to Knoxville in the 1990s he wanted to open a sandwich restaurant “like no other,” she said. “And there is not a sandwich shop like the product he puts out.

“So, we thought it was a good niche for him and a good niche for Knoxville,” Asher added. “His expertise is sandwiches, among other things, and he’s very good at it. Preparing food is his passion.

“This (restaurant) is another dimension of the food service business — combining the dine-in, carry-out and larger catering job.”

Gipson said he and Asher chose the site next to Canton Hollow Road because “it’s a great location. It took eight months before we found it.

“This is a very good stretch of West Knox County,” Gipson added. “There’s a lot of traffic from residents and busineseses. It’s one of the best venues for this restaurant, and people around here like to eat out.”

The restaurant is open from 11 a.m. to 4 p.m., Monday through Saturday.
