Bakery café chain plans Farragut location
“We are excited,” Miramontes said.
After long careers in supply chain management, documentary-making and logistics, the Watsons and Miramontes were looking for a new business opportunity that would allow them to come back to Knoxville, a place they called home while students at UT.
The trio said they are launching their first of four locations in Farragut near the end of this year, with more possibly coming in Bearden/West Hills, the UT campus and Maryville.
“We’re bringing this to the market for the first time, all the way around,” Aimee said.
“Doug and I just moved back to the area,” she added. “We’ve been in Pennsylvania for the past 12 years, so we’re back and really excited to do this in the community and with our family.”
“Currently, there are three Paris Baguettes in Tennessee, but they all reside out in the Nashville area,” Doug said. “We’ll be the area developers for the Knoxville market.”
“We’ve done a lot of market research with Paris’ corporate office; and looking at where growth is and where new businesses are going, those are a target radius within like 3 miles in and around those particular locations,” Aimee said. “And being out in west Knoxville, we know how much this has grown since we were in school.
“Right now we’re in lease negotiations [with Biddle Farms],” Doug said. “The goal is to have the lease wrapped up, hopefully, in the next couple of weeks.
“Then construction at Biddle Farms hopefully to begin in May, so our target goal is to have the first store open in November or early December of this year,” he added.
“Paris Baguette is a bakery/café, specializing in different types of artisan cakes, sandwiches, grab-and-go-type things, ” Doug explained. “We want to bring the bakery atmosphere to a city or town. We wanted to bring the café to the Farragut area as our No. 1 location.
“With the Town Center, Biddle Farms being built, we thought of that as a prime location with that being a town center for Farragut,” he added.
Aimee said the café carries a wide variety on its menu, anything from cakes and tarts to macarons to both sweet and savory pastries.
One can expect to find a pepperoni croissant pizza and ham and cheese croissants, coffees, frappes, lemonades, hot chocolate and hot
teas.
